| Things
to consider about Wedding Cakes: |
-
When To
Order: Plan to make contact with your
baker at least 60 to 90 days before your
wedding date or as soon as your wedding
date is confirmed. We may limit the
number of bookings per date, so plan
early.
-
Serving
Size: Keep in mind when ordering your wedding
cake that you'll want to save the top
layer. So order a cake that will be large
enough for all of your guests to have
enough to eat so that the top layer is
reserved for your first year wedding
anniversary. If you have a wedding
coordinator, you'll want to be sure that
they put that layer aside for you.
-
Pricing:
Wedding cake prices are based on a
rate per person and can change depending
upon the number of people, availability
of seasonal fresh fruits, and types of
fresh flowers that may be used. Prices are
subject to change.

Types
of icings:
-
Swiss
Butter Cream
is
very smooth to the pallet and is not
overly sweet. It is made with five
ingredients, egg whites, granulated sugar, confectionary sugar,
AA unsalted butter,
and pure vanilla extract. This icing
can be
changed to any flavor you desire with ease
and can also be tinted to any
desired color you want.
Ganache
is made
with European white or dark chocolate and 40% heavy
cream for a very rich glaze that surrounds
the cake layers and gives it a smooth shiny
appearance.
-
Rolled
Fondant is a prepared icing
that is paper white in color. It
surrounds the cake layers and hardens to a smooth
finished look. This icing can be tinted to any
desired color and may also be shaped into
garnishes for your cake.

Styles
of wedding cake:
-
Stacked
Cake - the layers are put one on top
of another with no space between.
-
Tiered
Cakes - the layers are separated
using clear or white plastic pillars, which
go through all of the cake layers to ensure that your cake will
be straight and there is no chance of it
tipping over.
-
Cascading
Cake - is the name given to
the cake when each tier is sitting on top
of an individual acrylic tube that are
different sizes flowing down creating the
look.
-
Clustered
Cake - the tiers are set up the
same way as a cascading cake, but there are
not as symmetrical.
